1/2cupvegan butter
3/4cupbrown sugar
2ripe bananas
1/2cupwhite sugar
2tspvanilla extract
2cupsall-purpose flour
1tspbaking powder
1tspsalt
1 1/2cupsvegan chocolate chips
Instructions
First, cream together the vegan butter, bananas, sugar, and vanilla extract until fluffy.
Next, stir in your flour, baking powder, and salt. Make sure to mix the mixture just until the flour is incorporated, don’t over mix the batter.
Next, fold in your chocolate chips and refrigerate the dough for at least 30 minutes.
Preheat your oven to 350° F and line a baking sheet with parchment paper.
Scoop 2 tbsp worth of dough onto your prepared baking sheet.
Bake your cookies for 13-16 or until golden brown on the edges. (I preferred mine to be baked closer to 16 minutes.)
Allow your cookies to cool completely before serving.
