In a large bowl, cream the vegan butter and brown sugar together.
Add the molasses and spices and mix evenly.
Mix and dissolve the baking soda and salt into the water. Mix into the butter, sugar, and spice mixture.
Finally, mix the flour into the batter. The dough should be pliable and easy to roll out. Let the dough chill for around 2 hours in a refrigerator.
Once chilled, preheat your oven to 400° F.
Roll out dough, a little at a time, on a lightly floured surface to around ¼ inch thickness. The thinner the dough, the crispier the cookies.
Cut out cookie shapes as desired and place on greased or parchment paper-lined cookie sheets.
Bake for 6-8 minutes and allow them to cool before serving.
