I don’t know about any of you, but gingerbread cookies are one of my favorite holiday treats. Whether they are soft and chewy, crispy, or even in the shape of a house. This vegan gingerbread cookie recipe is more like the classic crispy old fashioned gingerbread cookies. Sweet with a lovely bold flavor from the ginger and molasses. I have been making this same gingerbread recipe since I was in elementary school. Today I will be sharing the veganized version of my old fashioned gingerbread cookies.

What ingredients do you need for vegan gingerbread cookies?

My favorite part of this recipe is how simple and short the ingredient list is. No fancy non-dairy milk or vegan egg replacements. Just some vegan butter, flour, and spices. Here’s what you’ll need:

  • Vegan butter, room temperature.
  • Brown sugar, packed.
  • Molasses, unsulphured
  • Ground ginger
  • Ground cinnamon
  • Ground cloves
  • Ground nutmeg
  • Baking soda
  • Salt
  • Water
  • All-purpose flour

How to make vegan gingerbread cookies?

Not only is the ingredient list simple for this recipe, but so are the instructions.

  • You’ll start by creaming your butter and sugar together. 
  • Then you’ll mix in the molasses and spices.
  • Next, in a small bowl, you will dissolve the baking soda into the water. Then mix it into the sugar, butter, and spices.
  • To finish the dough you’ll mix in your flour until it’s fully incorporated. Then you’ll let the dough chill in the fridge for at least 2 hours. This will allow the dough to hold its shape while it’s baking. 
  • Once the dough is chilled, you can roll it out on a floured surface. 
  • Finally, you’ll bake your cookies and allow them to cool. You can serve them as is, or frost for a delicious and fun activity.

Ingredients

  • 2/3 cup vegan butter, room temperature.
  • 1/2 cup brown sugar, packed.
  • 1/2 cup molasses
  • 2 tsp ground ginger
  • 1 tsp ground cloves
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 tbsp water
  • 3 cups all-purpose flour

Instructions

  • In a large bowl, cream the vegan butter and brown sugar together.
  • Add the molasses and spices and mix evenly.
  • Mix and dissolve the baking soda and salt into the water. Mix into the butter, sugar, and spice mixture.
  • Finally, mix the flour into the batter. The dough should be pliable and easy to roll out. Let the dough chill for around 2 hours in a refrigerator.
  • Once chilled, preheat your oven to 400° F.
  • Roll out dough, a little at a time, on a lightly floured surface to around ¼ inch thickness. The thinner the dough, the crispier the cookies.
  • Cut out cookie shapes as desired and place on greased or parchment paper-lined cookie sheets. 
  • Bake for 6-8 minutes and allow them to cool before serving.
