Vegan Garlic Herb Potatoes (Air Fried)

These vegan garlic and herb potatoes are flavorful, easy to make, and require minimal oil. You can make these air-fried potatoes in just 30 minutes. This recipe is one of my go-to breakfast sides. Learn how to make this delicious air fried breakfast potato recipe down below.

Ingredients for Vegan Garlic Herb Potatoes:

These delicious air fried vegan potatoes require just a few simple ingredients:

  • Potatoes: We used russet potatoes, but feel free to use any kind you like: yukon gold, red, or russet.
  • Oil: I used olive oil, but use whatever kind you prefer.
  • Rosemary: Fresh or Dried
  • Parsley: Fresh or Dried
  • Garlic Powder
  • Salt

How to make Vegan Air Fried Potatoes:

Making vegan roasted potatoes in the air fryer is incredibly easy.

  • Start by rinsing and scrubbing any excess dirt off your potatoes. You may peel your potatoes, but I like leaving the skin on them.
  • Next, chop your potatoes in 1-inch pieces.
  • Add your now slice potatoes into a mixing bowl. Add your oil as well and toss the potatoes till the oil evenly coats your potatoes.
  • Next, add and toss all your seasonings with the potatoes: rosemary, parsley, garlic, and salt.
  • Once your potatoes are evenly coated in oil and seasoning pour the potatoes into your air fryer basket.
  • At 400 degrees F cook your potatoes for 30 minutes. Halfway through you’ll want to give the basket a good shake to make sure all the potatoes cook evenly and become crispy.
  • Once the potatoes are finished cooking toss them in a little more salt to taste and serve.

Ingredients

  • 2 pounds potatoes cut into 1-inch pieces
  • 1-2 tbsp oil (I used olive oil)
  • 2 tbsp rosemary, chopped (Fresh or Dried)
  • 1 tbsp parsley, chopped (Fresh or Dried)
  • 1/2 tbsp garlic powder
  • pinch of salt, to taste

Instructions

  • In a large bowl add all your ingredients: potatoes, oil, and seasoning. Toss everything together so the potatoes are all covered with some oil and seasoning.
  • Preheat your air fryer if required. Otherwise, add your potatoes to the basket, and cook for 30 minutes at 400° F. Halfway through you’ll want to give the basket a good shake to mix up the potatoes to cook them evenly. 
  • Once the potatoes are done cooking you can toss with a little more rosemary and salt to taste.
  • Serve your potatoes with some ketchup, fruit, or maybe a tofu scramble and enjoy!
